How is it decaffeinated?

The Mountain Water Method, at Latin America's first decaffeination plant in Córdoba, Veracruz. Pure glacial water off Pico de Orizaba, Mexico's highest mountain, lifts the caffeine out through osmosis and leaves the flavour compounds where they are. No chemicals, no solvents, just water.

Does it taste like decaf?

No. Single origin Bourbon from Chiapas, Oaxaca and Veracruz, roasted medium. Nutty, hazelnut, caramel and malt, strength three out of five. Most people cannot pick it in a blind cup.

How much caffeine is left?

A trace. The process is rated to remove 99.9 per cent of the caffeine, so a cup has next to none. Fine at 9pm.

How should I brew it?

Same as any of our blends. For espresso, 22g in, 44g out, 28 to 30 seconds at 93°C. Works through milk, black, plunger or stovetop.
