Third generation farmer Thelma de Gutierrez grows coffee on just 3.2 hectares, high in the Apaneca Ilamatepec mountain range near Ataco, a town long known for quality coffee. Volcanic soil, a natural spring and native shade trees give the coffee a healthy start, and Thelma uses natural pest control to look after the land. This lot is Red Icatu, every cherry handpicked, then dried whole as a natural on raised beds for up to 20 days and turned often so it dries evenly.

Tasting Profile

Citrus and mandarin up front, chocolate underneath and a bright star fruit finish. Sweet, clean and full bodied.

Brewing Recommendations

Roasted with espresso in mind. The chocolate carries through milk, and as a short black the citrus and mandarin stay bright. As filter the fruit opens up even further.

Producer Context

Thelma's farm is small, and that is the point. On 3.2 hectares every tree gets looked at, every cherry is picked by hand, and the drying beds are turned often through the day. Ataco has a long reputation for coffee, and this lot shows why.

El Salvador Madre Tierra: Thelma de Gutierrez

Filter · Aeropress · Espresso

Thelma de Gutierrez is a third generation coffee farmer working just 3.2 hectares in the Apaneca Ilamatepec mountains near Ataco.

Small farm, close attention. Volcanic soil, a natural spring and native shade trees do a lot of the work, and Thelma uses natural pest control to look after the land rather than strip it.

Every cherry is picked by hand, then dried whole on raised beds for up to 20 days, turned often so nothing sits wet.

Good land, careful hands. The cup follows.
