Don Mario Gonzalez started from scratch. Before 2006 this was timber country. When the logging laws changed, the family turned pine plantation into coffee farms - three of them now, across Nueva Segovia.
Walk Los Suyates and you notice what is not there. Coffee trees do not fill every corner. Don Mario keeps parts of the land wild on purpose, and the tall native shade holds the temperature down so the cherries take their time. In a warming climate that is not sentiment, it is strategy.
He also has a picking crew that comes back every harvest. That is rare. It happens because he pays them properly and they pick only ripe, which is the same reason the coffee is this clean.
Processing runs through Bridazul, the Nueva Segovia mill founded by Claudia Lovo and Tim Willems, whose full-time team is 80% local women. Bridazul open their tanks, drying beds and cupping room to producers who could never fund that gear alone.
